We recently began a plant-based diet and missed having egg dishes like scrambled eggs, omelets, and the occasional quiche. Mung dal or split yellow lentils, (along with a few other ingredients) make a very close, and tasty, substitute for our favorite breakfast. Now to find something just as good to replace bacon, lol 😆
